Raw Hot Cross Buns

Serves 12

INGREDIENTS:

  • 1 cup sunflower seeds

  • 1/2 cup linseed / flaxseed

  • 1.5 cups oats

  • 1 cup medjool dates, pitted

  • 1 cup desiccated coconut

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 tsp allspice

  • 1/2 tsp nutmeg

  • 1 orange, zest and juice

  • 2 tbsp coconut oil, melted

  • 2 tbsp of rice milk (more as needed)

  • 50g dark chocolate (85%)

METHOD:

  1. In a food processor, add the sunflower seeds and linseed and grind into a powder. Next, add the oats and do the same. The end result should be a flour like texture made up of these three ingredients.

  2. Add the medjool dates, coconut, cinnamon, vanilla, allspice, nutmeg, orange zest and juice, melted coconut oil and rice milk to the food processor. Blitz all ingredients together until well combined.

  3. Grabbing one heaped tablespoon at a time, roll it into a ball and set aside. Repeat with the rest of the mixture.

  4. Melt the dark chocolate and drizzle a cross over each ball.

  5. Place in the fridge until the chocolate sets, then serve and enjoy.

Keep these stored in the fridge for up to 5 days.
