White Chocolate Snowballs
We all love bliss balls right… but have you ever tried a white chocolate version? These are free of medjool dates and packed full of goodness. Trust me when I say you’re going to want to try them! They’re a festive recipe that you can enjoy all year round.
White Chocolate Snowballs
Gluten Free | Vegan
Serves 12
Ingredients:
1 cup cashews
1 cup desiccated coconut, plus more for rolling
1/2 cup almond meal
1/4 cup pure maple syrup
1/4 cup almond butter
1 tablespoon coconut milk
1 teaspoon vanilla extract
Method:
Add all ingredients to a food processor until smooth and sticky.
Scooping out a tablespoon of mixture at a time, roll into a ball and cover in desiccated coconut.
Repeat until the mixture is finished and you have 12 even truffles.
Place in the refrigerator to set and enjoy as desired.
Storage: these can be kept in the fridge for up to 5 days or frozen for months (if they last that long).
