Salted Caramel Slice

A healthy version of the much loved caramel slice. Made up of real foods and containing the added benefits of each of the nutritious ingredients - this one is worth a shot for all of the caramel slice lovers out there.

Salted Caramel Slice

Ingredients for Base:

  • 1 cup almonds

  • 1/2 cup rolled oats

  • 1/4 cup extra-virgin coconut oil, melted

  • 2 tablespoons pure maple syrup

Ingredients for Caramel Filling

  • 1 cup medjool dates, pitted and soaked

  • 1/3 cup almond butter

  • 1/3 cup brazil nuts

  • 1/2 cup coconut milk, more if needed

  • 1 tablespoon pure maple syrup

  • 1 teaspoon vanilla extract

  • 1 pinch sea salt

Ingredients for Chocolate Topping

  • 100 g 85% dark chocolate, broken into chunks

  • 1/2 tablespoon extra-virgin coconut oil

  • 1 pinch sea salt

Method:

  1. Line a square tray or dish with baking paper to start.

  2. Add all base ingredients into a food processor and blitz to combine, this should be crumbled and sticky when done.

  3. Pour into the tray and press into the base. Place in the freezer while you work on the filling.

  4. Next, add all of the caramel filling ingredients to the same food processor. Blitz until smooth, adding more coconut milk if needed. This still needs to be thick so be cautious not to add too much.

  5. Remove the tray from the freezer and pour the caramel filling onto the base.

  6. Spread to cover evenly and place in the freezer until the caramel sets, preferably overnight.

  7. Once the caramel is set, add the dark chocolate and coconut oil and melt in a double boiler on the stove.

  8. Remove the caramel slice from the freezer and pour the melted chocolate on top of the caramel filing.

  9. Sprinkle over the salt chunks and place back into the freezer to set.

  10. Once the chocolate has hardened, remove from the freezer and serve.

Store in the fridge for up to a week, or freezer for up to 3 months.
