Lemon Slice

I love making healthy versions of all my favourite sweets and this lemon slice is no exception! The delicious taste with none of the nasties, this one is a regular in my house.

Lemon Slice

Serves 12 | Vegan | Nut Free

Ingredients

  • 2 cups of rolled oats*

  • 1 cup of sunflower seeds

  • 1 cup of shredded coconut

  • 8 medjool dates

  • 2 lemons, juice and zest

  • 2 tbsp plant milk (of your choice)

  • 1 tbsp coconut oil

Method

  1. Line a square dish or tray with baking paper.

  2. Add all ingredients into a food processor and combine until sticky.

  3. Pour the lemon slice mixture into the tray.

  4. Leave to set in the fridge for 1-2 hours.

  5. Cut into 12 pieces to serve.


*To make this gluten free, replace the 2 cups of oats with an extra 1 cup of sunflower seeds and 1 cup of shredded coconut.
