Lemon Slice
I love making healthy versions of all my favourite sweets and this lemon slice is no exception! The delicious taste with none of the nasties, this one is a regular in my house.
Lemon Slice
Serves 12 | Vegan | Nut Free
Ingredients
2 cups of rolled oats*
1 cup of sunflower seeds
1 cup of shredded coconut
8 medjool dates
2 lemons, juice and zest
2 tbsp plant milk (of your choice)
1 tbsp coconut oil
Method
Line a square dish or tray with baking paper.
Add all ingredients into a food processor and combine until sticky.
Pour the lemon slice mixture into the tray.
Leave to set in the fridge for 1-2 hours.
Cut into 12 pieces to serve.
*To make this gluten free, replace the 2 cups of oats with an extra 1 cup of sunflower seeds and 1 cup of shredded coconut.
