Healthy Rocky Road

As a chocolate lover, there’s no way I wasn’t going to create a healthy version of the popular sweet - rocky road. This one is full of the good stuff, low in sugar and has some great nutritional benefits. Hello increased mood from the cacao, zinc from the pepitas and antioxidants from the goji berries (just to name a few).

The a great treat to have on hand for a chocolate hit or the perfect dish to make and take along to a party, this rocky road has you covered. The colours also make it a really pretty dessert and you’ll impress your friends with how good it looks and tastes.

Healthy Rocky Road

Vegan | Gluten Free

Serves 16 

Ingredients

  • 1 cup cacao butter

  • 1 tbsp coconut oil

  • 1 cup cacao powder

  • 2 tbsp maple syrup

  • 1 cup hazelnuts

  • ½ cup pepitas (pumpkin seeds)

  • ½ cup shredded coconut

  • ½ cup goji berries

Method

  1. Line a 20x20 tray with baking paper.

  2. In a double boiler over the stove, add the cacao butter and coconut oil. 

  3. Once melted, add the cacao powder and stir through. 

  4. Stir through the maple syrup. 

  5. Turn off the heat and add the hazelnuts, pepitas, coconut and goji berries. Stir well to combine. 

  6. Pour the rocky road mixture into the lined tray.

  7. Refrigerate until solid before cutting into 16 pieces.
