Cookie Dough Bites
Say hello to a delicious sweet snack with an extra dose of fibre. You may know that I love adding beans into sweets and this variation of a bliss ball features the humble chickpea. Yes chickpeas are great for more than just hummus… I love having these cookie dough bites on hand as a snack and they feel like a treat while being packed with nutrients. With the fibre from the oats and chickpeas they’re also great for our gut health and you may have heard me say that gut health is the foundation to good health.
For all the mums out there, these are also a school lunch box friendly snack, as they’re completely nut free!
Cookie Dough Bites
Vegan | Nut Free | Gluten Free Option
Prep Time: 15 minutes
Makes 15
Ingredients
2 cups rolled oats*
1 can chickpeas, drained and rinsed
½ cup tahini
⅓ cup maple syrup
3 tbsp coconut milk
½ tsp vanilla extract
80 g dark chocolate, 85% or higher
Method
Add the oats to your food processor and blitz them into a flour consistency.
Place all remaining ingredients, except for the chocolate, into your food processor and continue to blitz the ingredients until mixed well. You may have to turn it off and scrape the sides down a couple of times to get everything combined.
Chop the dark chocolate into small chunks and stir through the cookie dough mixture.
With slightly damp hands, roll one tablespoon of the mixture into a ball.
Repeat with the rest of the mix until it has all been rolled out into cookie dough bites.
*To make this completely gluten free, substitute the rolled oats for quinoa flakes, sunflower seeds or almond meal.
Storage: These cookie dough bites can be stored in the fridge for up to 5 days.
