Gingerbread Granola Slice
Gingerbread cookies are popular around this time of year, but what about a gingerbread granola slice? This is a delicious snack to get you into the festive spirit. Here’s the recipe for you to enjoy:
Gingerbread Granola Slice
Serves 9
Dry Ingredients:
1.5 cups rolled oats
3/4 cup pecans
1/2 cup sunflower seeds
1/2 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Wet Ingredients:
1/2 cup medjool dates
1/3 cup almond butter
1/4 cup pure maple syrup
1 tablespoon extra-virgin coconut oil
1/2 teaspoon vanilla extract
Method:
Preheat the oven to 180 degrees celsius, fan forced.
Line a slice tray with baking paper and set aside.
Add all dry ingredients into a bowl and stir to combine well.
Add the dates and wet ingredients into a food processor and blitz to combine into a sticky paste.
Add this paste into the bowl with the dry ingredients and stir until everything is coated.
Add the slice into the tray and spread it out evenly.
Place the tray in the oven for 15-20 minutes, until the top is slightly golden.
Remove from the oven and slice into 9 pieces.
Store in an airtight container in the pantry for up to 5 days.
