Healthy White Chocolate Rocky Road

We all love a good rocky road and my original healthy rocky road is a winner, but what about a healthy white chocolate rocky road?! Considering no white chocolate is healthy (it’s just sugar and milk) you may think this is impossible… But I’ve created the perfect white chocolate rocky road that is super low in sugar and full of so many amazing real foods. Oh and it’s even vegan friendly!

White Chocolate Rocky Road

White Chocolate Ingredients:

  • 1 cup cashews, soaked overnight

  • 1 cup cacao butter

  • 2 tablespoons extra-virgin coconut oil

  • 2 tablespoons pure maple syrup

  • 1/2 teaspoon vanilla extract

Rocky Road Fillings:

  • 1 tablespoon orange zest

  • 3/4 cup raspberries (fresh or frozen)

  • 1/4 cup goji berries

  • 1/2 cup pistachios

  • 1/2 cup pepitas (pumpkin seeds)



Method:

  1. Line a square tray or dish with baking paper.

  2. Prepare the rocky road filling ingredients by adding them all into a bowl, stir to combine.

  3. Add the soaked cashews to the food processor and blitz until creamy.

  4. In a double boiler over the stove, melt the cacao butter and coconut oil.

  5. Once melted, add to the food processor with the cashews.

  6. Also add the maple syrup and vanilla extract and blitz to combine.

  7. Pour this mixture ito the bowl with the rocky road filling ingredients and stir to combine.

  8. Pour the rocky road into the lined tray, smooth evenly and place in the freezer to set.

  9. Once set, this is ready to serve and enjoy.

Store in the fridge for up to 5 days, or in the freezer for up to a month - if you don’t eat it all first!
