Choc Cherry Bites

Chocolate and cherries make a heavenly combination and every time I make these delicious bites they get demolished. They’re almost like a healthy bite sized take on a cherry ripe - but so much more nutritious!

Choc Cherry Bites

Vegan | Gluten Free | Nut Free Option

Serves 15

Ingredients:

  • 1 cup cherries (fresh or frozen)

  • 1 cup almonds

  • 1/2 cup medjool dates, pitted

  • 1/2 cup shredded coconut

  • 2 tablespoons cacao powder

  • 2 tablespoons extra-virgin coconut oil

Ingredients for Coating

  • 100 g 85% dark chocolate


Method:

  1. Add all ingredients to a food processor and blitz until wel combined and sticky.

  2. Scoop out one tablespoon at a time and roll into a ball.

  3. Place on a plate and repeat with the remaining mixture.

  4. Melt the chocolate over a double boiler on the stove.

  5. When the chocolate is melted, stab one of the cherry bites with a fork and dunk it into the chocolate to coat.

  6. Repeat with the remaining cherry bites until they're all coated.

  7. Transfer to the freezer to set. Once set, these are ready to enjoy.

Store in the fridge for up to 5 days or freeze.

*These can be made nut free by swapping the almonds for sunflower seeds.
