Easy Buckwheat Porridge
Gluten Free | Vegetarian | Vegan Option
Serves 1
INGREDIENTS:
1/2 cup buckwheat, rinsed
3/4 cup coconut milk
1/4 tsp ground cinnamon
FOR SERVING:
1 tbsp peanut butter (or nut/seed butter of your choice)
1 tbsp Greek yoghurt*
1/2 cup blueberries
1 tsp chia seeds
METHOD:
Add the buckwheat, coconut milk and cinnamon to a saucepan over low heat and stir to combine. Cook for 15 minutes, stirring occasionally. Add more liquid if needed.
Once cooked, remove it from the heat and transfer into a bowl.
Top with peanut butter, a dollop of yoghurt and the blueberries.
Sprinkle over the chia seeds and serve.
*To make this vegan, simply swap the Greek yoghurt for coconut yoghurt, or leave it out completely.
