Easy Buckwheat Porridge

Gluten Free | Vegetarian | Vegan Option

Serves 1

INGREDIENTS:

  • 1/2 cup buckwheat, rinsed

  • 3/4 cup coconut milk

  • 1/4 tsp ground cinnamon

FOR SERVING:

  • 1 tbsp peanut butter (or nut/seed butter of your choice)

  • 1 tbsp Greek yoghurt*

  • 1/2 cup blueberries

  • 1 tsp chia seeds

METHOD:

  1. Add the buckwheat, coconut milk and cinnamon to a saucepan over low heat and stir to combine. Cook for 15 minutes, stirring occasionally. Add more liquid if needed.

  2. Once cooked, remove it from the heat and transfer into a bowl.

  3. Top with peanut butter, a dollop of yoghurt and the blueberries.

  4. Sprinkle over the chia seeds and serve.

*To make this vegan, simply swap the Greek yoghurt for coconut yoghurt, or leave it out completely.
