Red Velvet Oats

A brilliant way to sneak vegetables into breakfast while tasting like you’re eating a treat, introducing my red velvet oats. The beetroot gives it the beautiful colour, while the cacao powder and medjool date add the indulgent taste to an otherwise ordinary overnight oat recipe.

As someone who eats a lot of overnight oats due to their convenience, I’m always looking for ways to change them up and keep them interesting. This is one of those experiments that turned out really well.

Red Velvet Oats

Serves 1


Ingredients

1 cup coconut milk
1 cooked baby beetroot
1 medjool date
1 tbsp cacao powder
1/2 cup rolled oats
1 tbsp chia seeds


Method

1. Add the coconut milk, beetroot, date and cacao to the blender and blitz until smooth.
2. Add the rolled oats and chia seeds to a bowl or jar and pour the liquid mixture on top.
3. Leave to sit overnight (or for at least 20 minutes).

That's it, so simple but seriously yum. Enjoy! 

Breakfast certainly doesn’t have to be boring and I aim to prove that through recipes like this one. It also doesn’t even feel like you’re eating veg but it helps you reach your 5 a day.
