Go-To Banana Pancakes

Saturday mornings mean one thing in my house… pancake breakfast! When I’m not experimenting with new varieties, this one is my go-to recipe. So quick and easy, while being utterly delicious. I can’t keep this one to myself, so here it is for you!

Go-To Banana Pancakes

Serves 1

Ingredients

  • 1/2 cup rolled oats

  • 1 banana

  • 1 free range egg

  • 1 pinch cinnamon

  • Coconut oil, for cooking

Method

  1. In your blender, blitz the rolled oats into a flour like consistency.

  2. Add the banana to a bowl and mash with the back of your fork.

  3. Add the egg and lightly beat before mixing it in.

  4. Next, add the ground oats and the cinnamon and stir well.

  5. Melt some coconut oil in your frying pan.

  6. Form pancakes with the batter in the heated pan. Cook each pancake for 3-4 minutes each side, until nice and golden.

  7. Remove from the heat and serve with your choice of toppings.

Some of my favourite toppings:

  • Generous spread of peanut butter, a dollop of greek yoghurt and some berries

  • Berries heated with a splash of water or lemon juice, to make a berry sauce.

  • Peanut butter and sliced banana.

  • Greek yoghurt and stewed apples.

  • A spread of choc hazelnut spread.

The options really are endless so feel free to get creative with how you serve them.

As pancakes are a weekly occurrence, I often change up the flavour to keep it interesting. Although if I’m being hones I could probably never get sick of pancakes, even if I ate the same recipe each week.

Great flavour variations:

  • Chocolate Pancakes: add 1 tbsp cacao powder

  • Golden Pancakes: add 1 tsp ground turmeric, 1/2 tsp ground ginger and a pinch of black pepper.

  • Matcha Pancakes: add 1 tsp matcha powder and a splash of vanilla.


To make these vegan all you need to do is replace the egg with a chia egg. This is just 1 tbsp of chia seeds, mixed with 3 tbsps of water. Left to sit for 15 minutes until it forms a gel like consistency.
