Basic Nut Free Granola
This recipe is my base granola recipe that I have as is or add different flavours and ingredients to. I love how simple it is but it works in so many different ways. My personal favourites are serving it up with yoghurt and fruit or topping my smoothie bowl with it - yum!
If you were to look inside my pantry you’d probably always find some of this granola in there. The thing I love about granola is that it lasts really well and it’s great to have there when you need to grab something quick. It’s even the perfect snack so it certainly doesn’t hurt to have it around.
Nut allergies can be quite common and there are a number of reasons we may need to make a ‘nut free’ granola like this one, so instead of keeping it to myself I want to share it with you to enjoy.
Basic Nut Free Granola
Vegan | Nut Free
Ingredients:
2 cups rolled oats
1 cup pepitas (pumpkin seeds)
1 cup sunflower seeds
1 cup shredded coconut
1/2 tbsp cinnamon
1/4 cup coconut oil
2 tbsp maple syrup
Method:
Preheat the oven to 160 degrees celsius, on a fan forced setting. Line a tray with baking paper.
Combine the rolled oats, pepitas, sunflower seeds and shredded coconut in a bowl.
Melt the coconut oil and stir through the maple syrup. Pour this into the bowl and stir to coat everything well.
Spread the granola evenly on the tray and place in the oven for 15 minutes, stirring every 5 minutes to avoid the top layer burning.
After this time, remove the granola from the oven and allow it to cool. Transfer to an air-tight container to store.
Serve this granola with greek yoghurt and fruit of your choice.
A serve of this granola is around 1/2 a cup, giving you 10 serves per batch.
