Nori Breakfast Wrap
A great savoury breakfast option that is so quick and easy to put together. I love incorporating seaweed into my diet and this nori breakfast wraps is one of the easiest ways to do so.
This recipe can be made with any combination of fillings and is a great way to use up leftover veggies you have in the fridge. I even make a delicious vegan version and I’ll be sure to add that recipe soon! For now, here is this simple but delicious spinach and avocado version.
Nori Breakfast Wrap
Serves 1 | Vegetarian | Gluten Free
Ingredients
Extra virgin olive oil, for cooking
2 eggs
1/2 tbsp plant milk
1/2 tsp ground turmeric
Pinch of salt
1 nori sheet
1/2 cup spinach
1/4 avocado, sliced
1 tsp of sesame seeds
Salt and pepper to taste
Method
In a small frying pan, add a splash of extra virgin olive oil and turn on to low heat.
Whisk the eggs with the plant milk of your choice, turmeric and a pinch of salt.
Add to the pan and cook for 3-4 minutes, until cooked and ready to flip over.
Flip the egg mixture and cook for another 2-3 minutes on other side. Once done, turn off the heat and set aside.
Place the nori sheet on your plate.
Top with the cooked egg, spinach, sliced avocado and sprinkle over the sesame seeds. Season with salt and pepper.
Roll into a wrap to serve.
This isn’t just suitable for breakfast, when I need a really quick but filling lunch this is one of my go-to’s and I’ll bulk it up with some more veggies inside. There is no end to the great combinations and flavours of this style dish.
