Ginger Berry Crumble

Crumbles are such a comforting breakfast, nothing beats eating one warm and fresh out of the oven. This one boasts immune boosting benefits, while being a filling, nutritious and super tasty breakfast option.

Ginger Berry Crumble

Serves 2

Ingredients:

  • 1.5 cups mixed berries

  • 3 cm piece of fresh ginger

  • 1 lemon, juiced

  • 3/4 cup rolled oats

  • 1/3 cup sunflower seeds

  • 1 tbsp linseed

  • 1/3 cup desiccated coconut

  • 1/2 tsp cinnamon

  • Sprinkle of ground ginger

  • ¼ cup coconut oil, melted

  • 1 tbsp raw honey (or maple syrup)

  • ½ cup Greek yoghurt, to serve

Method

  1. Preheat your oven to 180 degrees celsius, fan forced.

  2. In a small oven dish, pour the berries in to make the bottom layer.

  3. Peel and chop/grate the fresh ginger into fine pieces and add onto the berries. Squeeze over the lemon juice.

  4. Add the sunflower seeds and linseed to a food processor or blender and process into a crumb like consistency. Pour into a bowl.

  5. Into the bowl, add the rolled oats, coconut, cinnamon, ground ginger, melted coconut oil and raw honey. Stir to combine well.

  6. Pour this crumble layer on top of the berry layer and put into the preheated oven to cook.

  7. Allow the crumble to cook for 20 minutes, check to see if it is browning on top and remove if it is. If not leave for another 5 minutes, be careful that it doesn’t start burning.

  8. Remove from the oven and divide between two bowls.

  9. Serve while it’s warm with a dollop of Greek yoghurt on each.

*To make this vegan, replace the Greek yoghurt with coconut yoghurt
