Avo & Pea Smash with Haloumi Toast Topper
As if smashed avo isn’t good enough on its own, add haloumi to it for a match made in heaven! This savoury toast topper is a great breakfast option for you to enjoy.
Avo & Pea Smash with Haloumi Toast Topper

Ingredients
2 slices wholemeal sourdough bread
Drizzle of extra-virgin olive oil, for cooking
1/2 cup frozen peas
1/2 avocado
Salt and pepper, to taste
50g haloumi, sliced
Method
Add a drizzle of olive oil to a frying pan over medium heat. Add the peas and sauté for 5 minutes, until cooked.
Place the peas in a bowl and add the haloumi to the pan. Cook for 3-4 minutes on each side, until golden.
In the meantime, toast the sourdough.
Mash together the cooked peas and avocado, then season with salt and pepper.
Divide the avo and pea smash between the toast and top with the cooked haloumi to serve.
