Mushroom, Kale & Feta Pizza Topper

As if mushroom, kale and feta weren’t a good enough combo - add them to a pizza and you have a winner of a dinner. Try this simple and nutritious topper next time you need some pizza inspiration.

Mushroom, Kale & Feta Pizza Topper

Gluten Free | Vegetarian

Serves 2

 

Ingredients

  • 1 tbsp extra-virgin olive oil

  • 1 brown onion, sliced

  • 5 field mushrooms, sliced

  • 2 cups kale, roughly shredded

  • Salt and pepper to taste.

  • 1 pizza base of your choice*

  • 50g feta, crumbled


Method

  1. Add the oil to a medium frying pan and sauté the onion for 7-8 minutes until it begins to golden.

  2. Add the mushrooms and kale, season with salt and pepper and cook for another 5 minutes.

  3. Place the mushroom mix on the pizza base and crumble over the feta to serve.


*In the pizza pictured, I’ve used a Zerofoods pizza base made from red rice, but this recipe is also delicious and packed with extra protein if you make my chickpea pizza base. You can find the easy recipe for that base here.
