Miso Brussel Bowl

A recipe from my online gut health program, Nourished Gut, this Miso Brussel Bowl is a new favourite of mine. Don’t take my word for it though, try it yourself using the following recipe.

Miso Brussel Bowl

Serves 1 | Gluten Free | Vegan

Ingredients

  • 4 brussel sprouts, halved

  • 3 radishes, halved

  • 1/2 carrot, sliced

  • 1/2 zucchini, sliced

  • 1/2 tbsp extra-virgin olive oil

  • Salt and pepper

For the Miso Dressing:

  • 1 tbsp miso paste

  • 1 tbsp water, boiling

To Serve:

  • 1 cup rocket

  • 2 tbsp walnuts, roughly chopped

  • 1/2 tbsp hemp seeds

Method

  1. Preheat the oven to 180 degrees Celsius in a fan forced oven.

  2. Lay the vegetables out on a baking tray, drizzle with olive oil and season with salt and pepper.

  3. Place the tray in the oven and cook for 20-25 minutes until roasted and crispy.

  4. When the veggies are nearly roasted, mix the boiling water with the miso paste and stir to combine.

  5. Remove the vegetables from the oven once cooked and pour over the miso paste, stir to coat them all well.

  6. Add the rocket to a bowl, followed by the roast vegetables, walnuts and hemp seeds.

  7. Serve while still warm.
