Lentil & Buckwheat Tabbouleh

Ingredients:
1/2 cup buckwheat, rinsed
2 cups lentils, drained and rinsed
2 tomatoes, finely diced
1 Lebanese cucumber, finely diced
½ red onion, finely diced
1 cup parsley, roughly chopped
1/3 cup mint, roughly chopped
Salt and pepper, to taste
1 lemon
2 tbsp extra-virgin olive oil
Method:
Start by cooking the buckwheat according to packet instructions.
Combine the lentils, tomato, cucumber, red onion, parsley and mint in a big bowl.
Once cooked, add the buckwheat to the bowl and season everything with salt and pepper.
Drizzle over the lemon juice and olive oil and stir to combine.
