Lentil & Buckwheat Tabbouleh

Serves 4

Prep time: 15 mins

Cook time: 10 mins

 

Ingredients:

  • 1/2 cup buckwheat, rinsed

  • 2 cups lentils, drained and rinsed

  • 2 tomatoes, finely diced

  • 1 Lebanese cucumber, finely diced

  • ½ red onion, finely diced

  • 1 cup parsley, roughly chopped

  • 1/3 cup mint, roughly chopped

  • Salt and pepper, to taste

  • 1 lemon

  • 2 tbsp extra-virgin olive oil

 

Method:

  1. Start by cooking the buckwheat according to packet instructions.

  2. Combine the lentils, tomato, cucumber, red onion, parsley and mint in a big bowl.

  3. Once cooked, add the buckwheat to the bowl and season everything with salt and pepper.

  4. Drizzle over the lemon juice and olive oil and stir to combine.
