Colourful Nori Wrap

One of the delicious lunches from my online program Nourished Gut, this colourful nori wrap is packed full of nutrients, filling and an exciting way to change up your wrap game.

Colourful Nori Wrap

Gluten Free | Vegan Option*
Serves 1

Ingredients

  • 1 sheet nori

  • 2 free-range eggs*

  • 1 tbsp plant milk (of your choice)

  • Pinch of turmeric

  • Salt and pepper, to taste

  • 1/4 carrot, grated

  • 1/4 cup cabbage, grated

  • 1/4 avocado, sliced

  • Small handful rocket

Method

  1. In a small frying pan, add a splash of extra virgin olive oil and turn on to low heat.

  2. Whisk the eggs with the plant milk of your choice, turmeric and a pinch of salt. Add to the pan and cook for 3-4 minutes, until cooked and ready to flip over. Flip the egg mixture and cook for another 2-3 minutes on other side. Once done, turn off the heat and set aside.

  3. Place the nori sheet on your plate.

  4. Top with the cooked egg, carrot, red cabbage, avocado and rocket. Season with salt and pepper.

  5. Roll into a wrap to serve.

*To make this vegan blitz, 1/3 cup chickpea flour with 1/3 cup of water in the blender and cook this in a frying pan, instead of the egg mixture.
