Super Green Rice

Created during a cleanse I was doing late last year, this detox worthy Super Green Rice is so delicious that it has made its way into the recipes that I have on regular rotation. This winner packs a number of nutritious green veg into one dish and pairs it with some tasty flavours.

Super Green Rice

Serves 2 | Vegan | Gluten Free
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients

  • 1/2 cup brown rice

  • 1/2 tbsp extra virgin olive oil

  • 1/2 leek, halved and sliced

  • 1/4 tsp chilli flakes

  • 1/4 tsp ground ginger

  • 1 zucchini, sliced and quartered

  • 2 cups broccoli, chopped into small florets

  • 1/2 bunch asparagus, chopped

  • 1/2 cup green peas

  • 1/2 tbsp tamari

  • 1 tsp sesame oil

  • 1/2 lemon, juiced

Method

  1. In a small saucepan, add the rice with double the quantity of water and a sprinkle of salt. Cook for 20-30 minutes, until the rice has absorbed that water and is ready. 

  2. Meanwhile, put a large frypan on the stove on low-medium heat. Sauté the leek in the olive oil until it begins to go golden. Add the chilli and ginger and allow to flavour for another minute.

  3. Add the zucchini, broccoli, asparagus, green peas and tamari into the pan and cook for 10-15 minutes until the vegetables begin to soften. 

  4. Remove from the heat and stir through sesame oil, lemon juice and cooked rice. 

  5. Add to a bowl to serve.

Here, I’ve topped it with some nori flakes to add another boost of nutrients. I love sneaking seaweed products into meals like this one!
