Pulled Jackfruit Tacos

Pulled jackfruit has been floating around the health food scene for a while now as a great vegan ‘meat alternative’. Having wanted to try it for some time, I finally got my hands on some and put it to the test in this fresh and summery taco recipe. Definitely going to be adding this one to the menu regularly with the weather warming up.

Pulled Jackfruit Tacos

Serves 2 | Vegan | Gluten Free

Prep. time: 10 minutes | Cook time: 10 minutes

Ingredients

 Pulled Jackfruit

·      1 tbsp extra-virgin olive oil

·      2 cloves of garlic

·      1 tsp ground cumin

·      ½ tsp paprika

·      ¼ tsp turmeric

·      1 can of jackfruit

·      Sea salt and pepper to taste


To Serve

·      4 corn tortillas

·      ¼ red cabbage, chopped

·      8 cherry tomatoes, halved

·      ½ cup corn

·      ½ red chilli, chopped

·      ½ avocado, sliced

·      1 lime, cut into quarters

 

Method

1.     Drain the can of jackfruit and pull apart the flesh into smaller pieces.

2.     Mince the garlic and add to a small saucepan with the olive oil.

3.     Once the garlic is golden, add the spices until fragrant

4.     Add the pulled jackfruit and stir well to combine

5.     Cook for 5-8 minutes, until heated through. Remove from stove.

6.     Warm the corn tortilla in an unoiled frying pan on the stove.

7.     Assemble the tacos by laying out the warmed corn tortilla and dividing the cabbage, cherry tomatoes, corn, chilli, avocado and jackfruit.

8.     Season with salt and pepper. Squeeze lime juice over the top and serve.

It’s that easy, a dinner ready in under 20 minutes that ticks the boxes of being healthy and delicious.

While jackfruit is a great alternative to meat for vegetarians and vegans alike, one thing that we do want to keep in mind is the low protein content of this fruit. This just means that we want to get other good sources of protein into the meal alongside this yummy ingredient.

To increase the already delicious flavour profile, you have the option to adding some Greek yogurt on top. This will also help boost the protein content of the meal as discussed above.
