Miso Mushroom & Quinoa Bowl

This recipe was specifically designed with our gut in mind! Combining fibre, prebiotics and probiotics (the 3 pillars to good gut health) this recipe both delicious and highly nutritious. The recipe was created for my Nourished Gut program and has made it onto heavy rotation in my house.

Miso Mushroom & Quinoa Bowl

Vegan | Gluten Free | Nut Free
Serves 2

Ingredients 

  • 1/2 cup quinoa, rinsed 

  • 3/4 cup water

  • Drizzle of extra-virgin olive oil, for cooking 

  • 1/2 leek, halved lengthways and sliced 

  • 2 cups of mushrooms (cup, button or shiitake), sliced 

  • 1 small zucchini, grated 

  • 3/4 cup peas, defrosted

  • 1 tbsp miso paste

  • 2 tbsp boiling water 

Method

  1. Add the quinoa and water to a small pot and cook for around 15. If needed, add more water until the quinoa is fully cooked.

  2. In a medium pan, add the olive oil and leek and sauté for 3-5 minutes, until golden.  

  3. Next, add the mushrooms, zucchini and peas. Cook for 5-8 minutes, until everything has cooked down.

  4. Stir through the cooked quinoa.

  5. Mix the miso paste with the boiling water and stir through the quinoa
    and veggie mix. 

  6. Divide between two bowls to serve.
