Deconstructed Sushi Bowl

I love the simplicity of sushi and the only way to make it even more simple and convenient is to deconstruct it! So, for when you don’t have time to roll your own sushi rolls, or just want an easy and delicious meal, this can be your new go-to.

Deconstructed Sushi Bowl

Serves 1 | Vegan | Gluten Free

Ingredients

  • 1/4 cup brown rice

  • 1/2 tbsp olive oil

  • 100g tempeh

  • 1/2 cucumber, sliced or grated

  • 1/2 carrot, sliced or grated

  • 1 sheet of nori, broken into smaller pieces

  • 1/4 avocado, sliced

  • 1/2 tbsp tamari

  • 1 tsp of sesame seeds

  • Pinch of chilli flakes

Method

  1. Cook the brown rice according to packet instructions.

  2. In a small saucepan over low-medium heat, add the olive oil and tempeh and cook for approximately 5 minutes on each side, until golden. Remove from the heat.

  3. Add the cooked rice, tempeh, cucumber, carrot, nori and avocado to a bowl. Drizzle over the tamari and add the sesame seeds and chilli flakes to serve.

An easy meal prep option, you can make this up in bulk and enjoy it for a few days in a row!
