Barramundi with Colourful Slaw

Slaw Ingredients:
150g brown rice noodles
2 sprigs spring onion, finely sliced
1 carrot, grated
1.5 cups red cabbage, finely sliced
1.5 cups snow peas, sliced into matchsticks
Salt and pepper, to taste
Barramundi:
½ tbsp extra-virgin olive oil
600g barramundi (4 pieces)
½ tbsp tamari
Dressing:
1 lime
½ tbsp sesame oil
½ tbsp tamari
Method:
Start by cooking the rice noodles according to packet instructions.
While these are cooking, combine the spring onion, carrot, red cabbage and snow peas in a bowl.
Allow the rice noodles to cool and add them to the bowl. Season with salt and pepper and combine the slaw ingredients.
Heat the olive oil in a pan and add the barramundi. Drizzle over the tamari and leave to cook for 5 minutes on each side, until cooked through.
Combine the lime, sesame oil and tamari to form a dressing, then drizzle over the slaw.
Place some of the slaw on each plate and add the cooked barramundi beside it.
To make this vegetarian, simply swap the fish for tempeh or tofu.
