Basil Pesto & Butter Bean Dip

Who doesn’t love pesto?! There is something so delicious about the flavour of basil.

Another thing I love about pesto is that it's a great way to get raw garlic into your diet. Raw garlic is amazing for our immunity and something that we can all benefit from at this time of year!⁠

Adding spinach alongside the basil is a great way to bulk it up and add even more nutritional benefits! This is an all rounder dip that can even be used as a pesto pasta sauce.

Basil Pesto & Butter Bean Dip

Vegan | Gluten Free

Ingredients:

·       2 cups basil

·       2 cups spinach

·       1 can butter beans, drained and rinsed

·       ¼ cup pine nuts

·       ¼ cup extra virgin olive oil

·       2 large cloves of garlic

·       1 lemon, juiced


Method:

1.     Add all ingredients to a food processor and blitz until creamy.

You can serve this dip with veggie sticks or crackers of your choice.
