Falafel Nourish Bowl

Falafels are a delicious addition to so many meals but this would have to be one of my favourite ways to eat them. I created this Falafel Nourish Bowl to really compliment their taste, by pairing them with some delicious ingredients. The result was this delicious salad that I know you’ll love.

Falafel Nourish Bowl

Serves 2 | Vegan | Gluten Free


Ingredients for Salad Bowl:

  • ½ cup brown or black rice

  • Olive oil, for cooking

  • 6 falafels

  • 10 cherry tomatoes

  • 1 cucumber

  • 6 radishes

  • 1/2 avocado

  • 2 cups mixed lettuce

  • 2 tbsp chilli hummus (optional)


Ingredients for Lemon Tahini Dressing:

  • Juice of 1 lemon

  • 1 tbsp tahini

  • 1 tbsp olive oil

  • Pinch of sea salt and black pepper


Method

  1. Cook the brown or black rice according to packet instructions.

  2. Heat the falafels with a drizzle of olive oil in a small pan.

  3. Cut the cherry tomatoes into halves, slice the cucumber, radishes and avocado.

  4. Halve all ingredients between two bowls.

  5. Prepare the Lemon Tahini Dressing and drizzle some over each falafel bowl to serve.
