Healing Mushroom Broth

I'm a big fan of mushrooms and their amazing medicinal properties! Not to mention their delicious flavour. So with the weather getting colder and soups and broths being on the menu, here is one of my favourites! This is also a great alternative to bone broth for all of my vegan or vegetarian friends.

A great warming snack to keep you satisfied between meals, this healing mushroom broth is something you can keep in the fridge and warm up to enjoy a glass as desired.

Healing Mushroom Broth

Makes 6 cups | Vegan | Gluten Free

Ingredients:

  • 1/2 tbsp coconut oil, more as needed

  • 1/2 large leek, halved and sliced

  • 1 packet (100g) shiitake mushrooms, sliced

  • 1 packet (150g) oyster mushrooms

  • 2 cups (180g) swiss brown mushrooms, sliced

  • 6 cups water

  • 1/4 cup fresh parsley, roughly chopped

  • Pinch of salt and pepper

Method

  1. In a medium pot, sauté the leek in the coconut oil until it becomes golden.

  2. Add the mushrooms and leave to cook down for around 5 minutes, adding more oil if needed.

  3. Add the water, parsley, salt and pepper and leave to simmer on low heat, with the lid on, for 40 minutes.

  4. Remove from the heat and strain the broth into a glass to serve or jars to keep.*

  5. Enjoy the broth as is or add to other recipes that require a vegetable stock.

*You can utilise the leftover mushrooms, parsley and leek in other recipes. As an example, this would go well in an omelette, can be eaten as is, or added to a piece of toasted sourdough. Or, use it to make a creamy mushroom soup by blending it all together with some warm water, or the above broth!
