Basil Pesto & Butter Bean Dip
Who doesn’t love pesto?! There is something so delicious about the flavour of basil.
Another thing I love about pesto is that it's a great way to get raw garlic into your diet. Raw garlic is amazing for our immunity and something that we can all benefit from at this time of year!
Adding spinach alongside the basil is a great way to bulk it up and add even more nutritional benefits! This is an all rounder dip that can even be used as a pesto pasta sauce.
Basil Pesto & Butter Bean Dip
Vegan | Gluten Free
Ingredients:
· 2 cups basil
· 2 cups spinach
· 1 can butter beans, drained and rinsed
· ¼ cup pine nuts
· ¼ cup extra virgin olive oil
· 2 large cloves of garlic
· 1 lemon, juiced
Method:
1. Add all ingredients to a food processor and blitz until creamy.
You can serve this dip with veggie sticks or crackers of your choice.
